Light, creamy, and refreshing, this simple coconut jello is made with coconut water, rich coconut milk, and a touch of vanilla. Serve it chilled with fresh fruit for an easy, naturally delicious dessert.
INGREDIENTS
2 cups unsweetened coconut water
5 tablespoons unflavored gelatin powder
1 can full-fat coconut milk, such as Aroy-D, Native Forest Simple Organic, or Trader Joe’s
1 teaspoon vanilla extract
Pinch of sea salt
Fresh fruit, for serving (optional)
DIRECTIONS
Pour 1 cup of the coconut water into a small bowl or 2-cup measuring cup. Sprinkle in the gelatin and whisk until well incorporated. Set aside for a few minutes to allow the gelatin to bloom and rehydrate.
In a small saucepan, combine the coconut milk with the remaining 1 cup coconut water. Add the bloomed gelatin mixture and warm over medium heat, stirring frequently, until the gelatin has completely dissolved. Do not boil.
Remove from the heat and stir in the vanilla extract and a pinch of sea salt.
Pour the mixture into a glass dish or individual serving cups. Allow it to cool, then refrigerate until completely chilled and set.
If using a glass dish, cut the coconut jello into squares before serving. Garnish with fresh fruit, if desired, and enjoy!
