Erica’s Lemon Jello

Bright, refreshing, and bursting with fresh lemon flavor, this homemade lemon jello combines fresh lemon juice and zest with grass-fed gelatin for a simple, vibrant treat.

INGREDIENTS

  • 4 cups water

  • 1 ½ cups cold water

  • 4–6 lemons, juiced (about ¾ cup fresh lemon juice)

  • Zest of 6 lemons

  • 6 heaping tablespoons grass-fed gelatin

  • Salt, to taste

  • Stevia or sweetener of choice, to taste

  • 6–10 drops lemon essential oil, optional

DIRECTIONS

Add 4 cups of water to a saucepan. Juice the lemons and set the juice aside. Add the lemon zest to the saucepan.

In a separate measuring cup or bowl, add the gelatin to 1 ½ cups cold water and allow it to bloom for 5–10 minutes.

Heat the water and lemon zest, then add the bloomed gelatin. Stir and continue heating until the gelatin has completely dissolved. Remove from the heat.

Pour the mixture into a 10 × 10-inch Pyrex dish. Stir in the reserved lemon juice, salt, and sweetener to taste. If using lemon essential oil, add it at this stage.*

Allow to cool, then refrigerate until completely set. Cut into cubes and serve chilled.

If using lemon essential oil, use only a product specifically labeled for culinary/food use and follow its directions for internal use.
